Paleo, Sugar Free Banana Bread
INGREDIENTS:
- 4 small bananas
- 4 large eggs
- 2 tsp vanilla
- 1/4 cup coconut oil
- 1/4 cup Monkfruit sweetener
- 1 3/4 cup blanched almond flour
- 1/2 cup tapioca flour
- 1 tsp baking soda
- 1/2 tsp baking power
- 1 tsp cinnamon
- 1/4 tsp salt
- optional: chocolate chips or chopped nuts
DIRECTIONS:
Preheat oven to 350 and line a pan with parchment paper
Mix wet ingredients and dry ingredients in different bowls.
Stir dry ingredients into wet without overbeating the bananas
Bake for 50-60 minutes
