Stir Fry Brown Rice with Shrimp
INGREDIENTS:
- 1 cup brown rice
- 1/3 cup green peas
- 1/3 cup chopped carrots
- 1/4 cup mushrooms
- 1 egg
- 1 tbsp minced garlic
- olive oil to coat the pan
- 1/4 cup coconut aminos
- salt and pepper
DIRECTIONS:
- Heat pan with olive oil and sauté carrots, peas, onion, and mushrooms. Cook for 3~ minutes before adding garlic.
- Create a space in the middle of the pan and crack an egg. Scramble the egg with the vegetables.
- Add pre-cooked brown rice, coconut aminos, and pre-cooked shrimp.
- Add salt, pepper, and optional: red pepper flakes.
