Sweet Pickled Onions
Excellent on tacos, salads, and sandwiches.
INGREDIENTS:
- 1 red onion or about 4 shallots
- 1/2 cup water
- 1/4 cup white wine vinegar
- 1/4 cup apple cider vinegar
- 1 tbsp maple syrup or monkfruit sweetener
- 1 tsp salt
- optional: red pepper flakes or cayenne
DIRECTIONS:
- Peel and chop onion or shallots. Set them aside in a mason jar.
- In a saucepan, combine water, vinegar, salt, sweetener, and red pepper flakes. Bring to a boil and then quickly remove from heat.
- Pour vinegar mix into mason jar. When the jar is room temperature, store in the fridge.
- Use as a garnish for salads, tacos, sandwiches, and more!
