Dark Chocolate Protein Muffins
These Dark Chocolate Protein Muffins are an easy gluten-free breakfast idea. Bonus: they're packed with healthy ingredients!
INGREDIENTS:
- 4 scoops chocolate protein powder* (1-1/3 cups)
- ½ cup monkfruit sweetener/ erythritol
- ¼ cup almond flour
- ¼ cup unsweetened cocoa powder
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1 - ¼ cup unsweetened almond milk, divided
- ½ cup dark chocolate chips, divided
- 4 egg whites
- 4 teaspoons vanilla extract
DIRECTIONS:
Preheat oven to 350
Mix dry ingredients
Microwave 1 cup almond milk + 1/4 cup chocolate chips until smooth
Add 1/4 cup almond milk, egg whites, & vanilla to chocolate/almond milk
Mix wet ingredients with dry
Bake for 18 minutes and enjoy!
